I've been curious about açaí bowls for a while now, after seeing them pop up on my friends' vacation feeds from trips to southern california and hawaii.

This non-dairy smoothie was created on a cold snowy day so that I could imagine that I was on a tropical beach somewhere. Lime juice and coconut extract give it a colada taste.

Ingredients | Tropical Smoothie Acai Bowl

2 cups vanilla soy milk

1 cup fresh pineapple chunks

⅔ cup frozen cantaloupe chunks

½ cup soft tofu

2 tablespoons lime juice

1 ½ teaspoons coconut extract

Directions

Blend soy milk, pineapple, cantaloupe, tofu, lime juice, and coconut extract in a blender until smooth.

Frozen banana chunks sub well in place of the cantaloupe.
