Enjoy!Ingredients | Eggo Thick And Fluffy French Toast Directionscooking spray4 large Granny Smith apples - peeled, cored, and sliced3 tablespoons white sugar½ teaspoon ground cinnamon½ teaspoon ground nutmeg½ teaspoon ground cumin1 tablespoon lemon juice, or as needed2 cups plain soy milk½ cup apple butter1 teaspoon vanilla extract1 teaspoon ground cinnamon¼ teaspoon salt12 (1/2 inch thick) slices soft-crust French breadDirectionsPreheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side.
